Vegan French Toast

I grew up eating french toast and it is still a go-to for a quick and delicious breakfast. While there is never a substitute for day old french or sourdough bread for french toast, a plant based sliced sandwich bread, as pictured below, works just fine.


1 ripe banana, mashed

1 13.5oz can coconut milk

1 Tbsp ground flax seeds

2 tsp ground cinnamon

1 tsp vanilla

1/2 tsp salt

2 tsp vegetable oil

Sliced bread


Combine all ingredients in a medium mixing bowl and whisk until well blended. Heat vegetable oil in a skillet on medium. When hot, coat one side of bread and then the other in the french toast batter then place in the skillet. Cook for a few minutes until it has browned on one side, then flip and repeat. Serve hot with your choice of toppings. Serves 4 - 6.
