Raw Vegan Cucumber Avocado Soup

So I found myself with an abundance of cucumbers from the garden and created a raw soup based on ingredients from the farm and others I had laying around. It turned out great and ended up creamy with a nice and slightly rich taste.

Here’s the recipe:

2 medium to large cucumbers

2 avocados

1 garlic clove

4-6 fresh basil leaves

3-4 fresh mint leaves

1 apple, cored and chopped into quarters

1 Tbsp lime juice

1/4 cup raw cashews

salt to taste

Place all ingredients in a blender and add 1-2 cups of water (adjust based on how thick you want the soup). Mix until smooth and refrigerate in an airtight container for 1-2 hours. Garnish with basil or mint leaves.

Serves 4-6.
