Vegan Malva Pudding - sooo good!

OMG!!! This plant-based version of the traditional South African dessert is amazing and one of the best things I have made this year! Recipe below.

Malva Pudding:


2 cups all purpose flour

1 1/2 cups raw sugar

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1 Tbsp white vinegar

1/2 cup plant based milk

1/2 cup applesauce

2 Tbsp apricot jelly

2 Tbsp melted coconut oil


Sauce:


1/2 cup vegan butter

3/4 cup raw sugar

1 cup canned coconut cream

1 tsp vanilla


Preheat the oven to 350F. Spray or oil a 9x9 square pan and set aside.


Sift the flour into a large mixing bowl and add sugar, baking powder, baking soda, and salt. Mix together. Add the white vinegar to the milk and let sit for a few minutes. The add the curdled milk, applesauce, apricot jelly and coconut oil to the flour mixture. Mix with whisk until a nice batter forms.

Transfer the batter to the baking pan and bake for 35 minutes or until a toothpick inserted into the center comes out clean.


When the Malva is nearly done in the oven, prepare your sauce. Melt the vegan butter in a saucepan, and then add sugar, and coconut cream. Once melted and combined, remove from heat and add vanilla.

When the Malva is finished in the oven, remove and with a toothpick poke holes all over. Pour the sauce over the Malva evenly letting it sink in. Serve warm with a vegan whip or ice cream.
