Incredible Vegan Bagels
These amazing bagels are fairly simple and quick to make with a minimal amount of ingredients. And it’s easy to experiment with different toppings of your choice. Fresh, homemade bagels are a great way to start the day.
3 tsp active dry yeast
1 1/2 cups warm water
1 Tbsp raw sugar
4 cups all purpose flour
2 tsp salt
2 Tbsp vegetable oil
In a small bowl combine the yeast with 1/2 cup of the warm water and the sugar. Mix and let sit a few minutes until the yeast becomes active and begins slightly bubbling.
In a large mixing bowl, combine the flour and salt. Add the yeast mixture, vegetable oil and 1 cup warm water. Mix well until a dough forms. Either knead by hand or with a mixer and dough hook for 10 minutes until a nice smooth round dough ball is formed. Place dough in an oiled mixing bowl, cover and let rise for 1 hour.
After the dough has risen, remove from bowl and place on a large cutting board. Cut into 8 equal pieces and form each into a round ball. Cover and let sit for another 10 minutes.
Boil water in a large stockpot. After 10 minutes, poke a hole in the middle of each dough ball and extend the hole to roughly an inch. Place each bagel dough into the boiling water, cooking for 1 minute on each side. Remove and let drain.
Preheat oven to 425F. Place each bagel dough onto a lined or greased baking tray (I use Silpat’s and love them). Lightly brush the tops with a plant based milk to create a golden light crust.
Place in the oven and bake at 425F for 20 - 25 minutes until golden brown. Remove and let cool.
