Amazing vegan waffles!

These plant based waffles are a regular go to in our home, typically reserved for weekends. Today I surprised the kids with a Tuesday batch!

1/4 cup ground flaxseeds (buy them ground or put whole flax seeds in a spice grinder)

1/2 cup water

3-1/2 cups plant based milk

2 Tbsp apple cider vinegar

2 cups all purpose flour

1-1/2 cups whole wheat flour

2 Tbsp baking powder

1 tsp salt

1/3 cup raw sugar (or sweetener of your choice)

1/3 cup olive oil

1 tsp vanilla extract


Start by combining the ground flaxseeds with water in a small bowl, then set aside. This mixture will act as a thickener and stabilizer for the batter.

Next combined the apple cider vinegar with the planet based milk, and set aside. This creates a "sour milk" mixture.

In a large bowl, combine the flours, baking power, salt, and sugar. (I also throw in anything else here that sounds good - chia seeds, oats, bananas, etc.). Mix well. Then pour the flax mixture, the sour milk, 1/3 cup oil and vanilla extract and mix until just combined.

Heat your waffle maker and when ready, scoop 1/2 cup of batter into the center.

Depending on your waffle iron, either wait until it signals it is done or check every few minutes until the waffle is brown and slightly crisp.

Add your favorite toppings and enjoy! Note: This recipe will make 8-10 waffles and left over batter will keep in the refrigerator for 3-5 days! Waffles for the week!
