Amazing Vegan Stuffed Mushrooms
Whether for a large party (think pre-covid) or a smaller intimate dinner, or just for fun, these stuffed mushrooms serve as a simple, quick and delicious appetizer.
20 - 25 mushrooms, de-stemmed (Cremini or white, but keep the stems)
1/2 large yellow onion, minced
4-6 cloves of garlic, minced
1 tsp dried basil
1 tsp dired oregano
1/2 tsp salt
1/3 cup vegan cream cheese
1/2 cup bread crumbs
olive oil
Finely chop the removed mushroom stems and place in heated skillet along with 2 tsp vegetable oil, onion, garlic, basil and oregano. Sauce for 3 - 5 minutes until the onion is translucent. Remove from heat and place in medium mixing bowl. Add bread crumbs and vegan cream cheese and mix well.
Preheat oven to 350F.
Line all of the mushrooms, face up, to fill. Drizzle a small amount of olive oil and sprinkle a small a tiny pinch of salt over each. Using a small spoon, fill each mushroom with the filling until level with the top. Cook at 350F for 25-30 minutes.
Serve warm and enjoy!!! Serves 4-6.
