Amazing Plant Based Cornbread

When I tell the kids I’m making chili for dinner, their first question is You are making cornbread right? In fact I think the only reason they are so excited about the chili itself is it has become the gateway for them to enjoy a warm, fresh out of the oven slice of homemade cornbread.


1 cup cornmeal

1 cup flour

2 tsp baking powder

1/2 tsp salt

1 cup plant based milk

1/3 cup sugar

1/3 cup vegetable oil

2 tsp apple cider vinegar


Preheat the oven to 400F. In a small to medium bowl, add the plant based milk, sugar, vegetable oil and apple cider vinegar. Let sit for a few minutes to get the soured milk effect.


In a separate medium to large mixing bowl, add cornmeal, flour, baking powder, and salt.


Mix the wet into the dry and pour into an oiled 8” round or square baking dish. Bake at 400F for 20-25 minutes or until a toothpick inserted in the center of the cornbread comes out clean.
